About us
Gelati Graziosiis the brand that is revolutionising the concept of ice cream by giving it a connotation that is not only fun, but also healthy, combining taste and well-being. Luigi Graziosi, a master ice-cream maker who has been working in the sector for more than twenty years, is known for creating unique products, for his profound knowledge of raw materials and the most sophisticated processing techniques. He has been able to refine the art of ice cream over time, preserving historical recipes, innovating with unusual flavours and always keeping an eye on the evolution of the sector, so as to position himself in a privileged way on the contemporary market.
Experience
In 1990 Luigi Graziosi started his activity as a master ice-cream maker by opening the "Re del Gelato" in the French Riviera. Returning to Italy after an exciting experience in Paris with the "Delice de Venice" ice-cream parlour, he became a technical trainer for the most important semi-finished products industry for ice-cream parlours in the world. In 2006 he returned to France and opened a school for ice cream makers. In 2010 he returned definitively to Italy to found "Gelati Graziosi", dedicating himself to natural ice cream, based on fruit and vegetables, as part of a healthy, nutritious and balanced diet. In 2015, an interesting comparison with the great master Gualtiero Marchesi.

Research develops and produces high level natural neutrals and complete bases for the ice cream and pastry sector, semi-finished products in natural paste for artisan and industrial ice cream.

Wellness ice cream
Gelati Graziosi values the relationship between food and emotions and the need to find comfort in ice cream, which can have a positive effect on mood. There are foods that by nature favour the release of endorphins, dopamine and serotonin, and contribute in a natural way to reducing stress; and here is "comfort food", which has the ability to influence mood thanks to the release of natural substances and adds emotional value to our ice cream. The combination of psychological and physiological aspects, therefore, means that a certain variety of foods, including our ice cream, fall under the definition of 'comfort food'.
Innovation
Wellness ice cream
Our products are the result of extensive innovative and groundbreaking research, including a special vegetable protein that slows down the melting of ice cream by creating a sort of film that keeps the ingredients together. In this way, the ice cream still melts, but much more slowly than usual. The protein also prevents the formation of new ice crystals, so the texture of the ice cream remains soft and creamy Ice cream containing our Vegetable Protein can also be made with less saturated fat and therefore fewer calories and less energy to produce it.
EXPERIMENTATION
Luigi Graziosi,the master ice-cream maker who has been teaching for decades in every corner of the world, has created, together with Ayurvedic Doctor Anjana Moktan Khatri and the owner of Himalayan Ayurvedic Herbal and Juce Ice Cream, Kapil Khatri, the first ice-cream which is considered by the Nepalese (and others) to be 'sacred' because the recipe for it was created more than 3,500 years ago by the Rishi (saint) named Chayavan. The preparation itself is named after him. The resulting 'Divine' ice cream is absolutely natural, the most important ingredient being Chayavan paste (a mixture of 48 Himalayan official herbs).
INDUSTRY

COURSES
The didactic course is structured in an initial theoretical part, necessary to understand the aspects of the specific work in ice cream parlours and in general in the professional catering sector. Then we move on to the practical part where the learned theory is immediately put to the test in a real company context of the sector in order to learn the profession and work as an ice-cream maker in companies such as bar-pastry shops, artisan ice-cream parlours or open your own ice-cream parlour. Students who pass the final exam are awarded a refresher certificate that certifies what they have learned during the training course.
